POTATO ROLL

Most of the persons like potatoes. I got a new idea of frying smashed potatoes. But i wanted it to be crispy and soft too. Then i planned to make it crispy by rolling it in corn flour. By doing so the outer layer is stiff and the inner potatoes are soft. If you have boiled extra potatoes for lunch then no problem your evening snack if almost ready. It takes nearly 5 min for you to prepare this snack - potato roll. It is like a outer crispy waffle filled with soft chocolate inside.

Serves 3-4 Persons
Ingredients
Boiled and smashed Potatoes - 4 medium sized.
Salt for Taste
Chilli Powder - 1 tsp
Corn flour- 2 tbsp
Bread crumbs- 3 tbsp
Luke warm water - 2 tbsp
Oil for deep fry.
Method
To the boiled and smashed potatoes add salt and chilli powder.
Mix it well and keep aside.
In a plate mix the corn flour and luke warm water.
In another plate spread the bread crumbs.
Make cylindrical rolls out of the potatoes.
8 to 9 rolls can be made out of it.
Then dip the rolls into the corn flour paste and then into the bread crumbs.
Now deep fry these rolls till they turn into golden brown in a medium high flame.
Serve hot with ketchup or sauce.

Rice Cutlet in Bell Pepper Sauce

Serves 2-3 Persons
Ingredients
For Rice Cutlet
Cooked Rice 1 1/2 cups
Chilli Powder 1/4 tsp
Pepper Powder 1/4 tsp
Salt Required Amount
Bread Crumbs 4 tbsp
Vegetable Oil or Sunflower Oil for deep fry.
For Sauce
Oil 1 tbsp
Onion 1 No
Bell Pepper 2 Nos
Chilli Powder 1/2 tsp
Soy Sauce 1 1/2 tbsp
Tomato Chilli Sauce 2 tbsp
Salt for taste
Water 1 Cup
Method
Rice Cutlet
Grind the cooked rice using a blender.
Make it coarse.
Add chilli powder, pepper powder, salt to it.
In a plate spread the bread crumbs. Make shapes out of rice and roll it in bread crumbs.
Deep fry the rice cutlet in the oil until it is deep brown.

Bell Pepper Sauce
Cut bell pepper vertically to form slits.
Cut onion into square pieces.
In a pan pour oil.
Saute onion to golden brown.
Add bell pepper and saute.
Add the remaining ingredients to it and cook for 4 minutes.

Ghee Rice

Serves 2-3 Persons
Ingredients
Cooked Basmathi Rice with Salt 1 Cup Raw Rice
Ghee or Margarine 4 tbsp
Jeera 1 tsp
Cashewnuts 10
Pepper 10 No. or Pepper powder
Curry Leaves

Method
In a kadai or pan heat oil in a medium flame.
When oil is heated up add the jeera.
Let it splutter.
Add cashewnuts and pepper to it.
Then add curry leaves to it.
When the cashewnut turns golden brown remove the kadai from flame.
Add this contents to the cooked rice and mix well.

Bell Pepper Salad

Serves 3 Persons

Ingreidients

Bell Pepper 2 No I prefer red and yellow coloured ones Onion Medium sized 1 No
One Small sized Tomato (optional)
Cucumber 1 No
Maize 5 tbsp
Cooked red Kidney beans 5 tbsp
Green Peas 4 tbsp (optional but i prefer)
Salt and Pepper for taste
Lemon juice 2 tbsp
Olive oil 1 tsp

Method

Take the seeds out of bell peppers and chop it to small square pieces and put it into a bowl.
Chopp onion, tomato (optional) into small pieces and add to bowl.
Chop cucumber into cubes and add to bowl.
Add the remaining ingredients to the bowl and mix it throughly with salad spatula.
Attractive and healthy salad is ready.

Lemon Rice

Serves 2-3 Persons

Ingredients

Cooked Rice (with required salt) Basmathi rice tastes better 1 Cup Raw Rice
Vegetable Oil 3 -4 tbsp
Musturd seeds 1/2 tsp
Red chillies 2 Nos make it into 4 pieces
Urad dal 1 tsp
Bengal gram / Channa dal 2 tbsp
Curry leaves 10 Nos
Turmeric powder-1/2 tsp
Lemon juice 2- 3 tbsp


Method


Take the cooked rice and keep aside.
In a kadai or pan heat the oil in a medium flame.
When the oil is hot enough put the musturd seeds into it.
When it starts spluttering add the red chillies,urud dal, bengal gram and curry leaves .
Fry it till it turn golden brown.
Now add turmeric powder to it. It takes nealy 2 minutes.
Let it cool.
Now add this fried ones to the cooked rice which is sufficiently warm.
Add the leamon juice to it.
Mix well.
The delicious lemon rice is ready.
It tastes well when taken atleast after 1 hour.
